The spec sheet at BA for first clear says .76% ash. So it's slightly "high extraction." (Regular white flour is .50 to .55% ash, whole grain is 1.6%) If you normally combine whole grains with bread flour, you may like using first clear instead.

MikeV. Thanks! That bread was 70% 1150-grade rye flour and 30% "first clear" wheat flour (the original recipe called for 1050-type wheat flour). Half of the rye (35% on total) was used for the levain/"vorteig." Maybe much more useful than the above, though: I got the recipe from Lutz Geißler's "Brotbackbuch #2."

In a large bowl, dissolve the yeast in the warm water. Let sit for 5 minutes, or until it starts to bubble and foam. Add the first clear flour, rye flour, rye sour starter, salt and caraway seeds. Stir with a wooden spoon until thoroughly incorporated. Turn the dough onto a well-floured work surface.

• Second, first clear is an almost perfect match for German Type 1050 flour, which shows up in a fair number of medium- and high-percentage ryes - that is, breads containing 50-90% rye.
