Key lime juice; 2 Tbsp. heavy cream; 1/2 cup diced fresh tomatoes; 1 scallion, thinly sliced; 1/4 cup finely shredded Parmesan cheese; 1 lb. cod fillet, cut into two equal pieces (or any white-fleshed fish)
