Sour Cream Raisin Bars…. Hubby isn't a raisin fan. Kalissa isn't a raisin fan. BOTH of them loved the bars so don't let a raisin hater discourage you from trying them. If you like sour cream raisin pie, you'll like these too. I opted with the variation at the bottom of the recipe. These were REALLY good and I am sure I will make them.

3 Tablespoons cornstarch. 2 cups sour cream. Put the raisins in a small bowl and cover them with hot water. Allow them to plump while preparing the crust and filling. Pre-heat the oven to 350°. Spray a 9×13 baking dish with non-stick spray. Mix together the oats, flour, brown sugar, and baking soda.

Cook on high for 5 minutes. Meanwhile, in a medium bowl, combine the crust ingredients. Press into a 9x13 pan and bake at 350° for 20 minutes. Remove the raisins from the heat and drain the water off the raisins. Stir in the sour cream and sugar. Whisk in the egg yolks, cinnamon, cloves and flour until smooth.

Cook over medium heat until mixture thickens & resembles pudding, about 8 minutes, then remove from heat & stir in raisins & vanilla. Refrigerate 1 hour before cutting & serving.

Line a 9 X 13 pan with parchment paper, spray lightly with cooking spray. Cover raisins with hot water and let soak until plump, 5 to 10 mins. Drain and set aside. Add raisins to 1 cup of water and heat to boiling on top of the stove. Remove and stir in butter and sugar till melted. (Can put back on stove on warm if you needed to melt butter and sugar) Stir into flour mixture with a spoon. Add the egg and continue stirring until all ingredients are mixed.
